Foodie Friday: Yellow Curry Chicken Salad

This is one of my favorite chicken salad recipes. If you are looking for a chicken salad recipe with a ton of flavor, this is the one! I like to serve this on a bed of baby spring mix or baby spinach to get all those wonderful vitamins, minerals, and antioxidants. This recipe is packed with protein and fiber to keep you full for hours.
Yellow Curry Chicken Salad
Ingredients
1 cup of mayonnaise (my favorite is Duke's because there is no added sugar and you can recognize all of the ingredients)
3 tbsp apple cider vinegar
3 tbsp yellow curry powder
4 boneless, skinless chicken breasts (about 2 lb) cooked, cooled, and diced
2 small Granny Smith apples (or 1 large), diced
Feel free to add in other veggies as you see fit: onions, celery, cucumber, jicama, avocado are some tasty choices
Directions
Mix the mayonnaise, apple cider vinegar, and curry powder in a large bowl until well mixed.
Add diced chicken and diced apples.
Stir until evenly coated.
Refrigerate until ready to serve.
Recommended serving size: 1 cup prepared
