Celebrate National Celiac Disease Awareness Day!

September 13th is National Celiac Disease Awareness Day! Celiac disease is a serious autoimmune disorder triggered by consuming gluten, a protein found in wheat, barley, and rye. For individuals with celiac disease, eating gluten damages the small intestine and prevents the absorption of essential nutrients. This can lead to various symptoms like digestive issues, fatigue, and even long-term health complications. In honor of National Celiac Disease Awareness day, I am sharing one of my favorite gluten-free recipes with you!
Ingredients
3 cups of cherry tomatoes, halved
2 cups of peeled and diced cucumbers
2 cloves of garlic, minced
2 tbsp of Basil, chopped
1/2 cup of Feta cheese, crumbled
1/4 tsp of salt
1/4 tsp of ground oregano
2 tbsp of lemon juice
1 tbsp of extra-virgin olive oil
1/8 tsp of ground black pepper
Directions
Combine all ingredients in a bowl, toss, and serve. Garnish with a few fresh basil leaves.
